Each bar is transparent ZEC created in that week and never spent since. It is a snapshot of what is still sitting there, not a flow: a bar can only shrink, never grow, and it shrinks the moment those coins move.
The spikes are usually one event. A single large exchange deposit or a run of coinbase rewards can put a whole week far above its neighbours. Read a spike as “something big happened that week and has not moved”, not as thousands of holders deciding to wait.
Old and unspent includes lost. Keys are lost, wallets are abandoned, and coins in that state look exactly like patience. Nothing on-chain separates the two, so the oldest bars are an upper bound on deliberate holding.
