Market cap is price times the coins mined so far. Bitcoin has issued about 95% of its cap and Zcash about 81%, so by market cap ZEC is a smaller share. The gap between the lines is the supply Zcash has yet to emit, relative to Bitcoin.

How big is Zcash next to Bitcoin?

Fully diluted value (FDV) prices every coin that will ever exist: today’s price × the supply cap. Zcash and Bitcoin both cap at 21,000,000 coins, so ZEC’s FDV as a share of BTC’s is exactly the ZEC/BTC price ratio, read as a percentage. The same cap is what makes the comparison fair: neither side is flattered by a bigger or smaller coin count.

The market-cap line counts only coins mined so far. Bitcoin has issued about 95% of its cap; Zcash about 81%, because it launched seven years later. So by market cap ZEC is a smaller share of Bitcoin than by FDV, and the gap between the two lines is the supply Zcash has still to emit relative to Bitcoin. It narrows with every block, on a schedule the halvings fix in advance.
